Chocolate Chip Biscotti Bleecker November 18, 2014 Dessert, Recipes This is by far an Eat Up New York favorite – Chocolate Chip Biscotti. These are great for the office, to bring to a holiday gathering, or to eat while you shove them in your mouth while watching tv. Here is what you will need to make these Chocolate Chip Biscotti happen: 2 cups of all Purposed Flour 1 1/2 teaspoons of baking powder 3/4 cup of sugar + a little bit more (for later on) because we like to sprinkle sugar on top with sugar before baking 1 Stick of unsalted butter – at room temperature Small Pinch of Salt 2 Large Eggs – Also at room temperature Heaping Handful of Mini Chocolate Chips Pre-heat your over to 350 degrees Combine the Flour, Baking Soda, and salt in a bowl and whisk gently until combined In a separate bowl combine the butter and sugar and mix together until blended. We like to use a mixer to combine the butter and sugar but you can certainly do it by hand if you like. Add the eggs, one at a time, to the butter and sugar mixture and beat until smooth. Next add the dry ingredients into the wet ingredients bowl and mix until mixture comes together. Add the Chocolate Chips to the mixture and stir until combined. On a parchment paper lined baking sheet (I prefer Silphat) roll your dough into a log measuring approximately 12 inches long. I like to pat the dough down so that the top is flat. This is when i like to sprinkle that extra little but of sugar on top before putting the dough into the oven. The sprinkled sugar gives it a nice crispy sugary crust. Bake in the oven for 40 minutes. When the baking is done you need to take the baking sheet out and let it cool- approximately an hour. After it’s cool cut the log into half inch slices with a serrated knife. Lay the slices flat on the cookie sheet and then bake for an additional 15 minutes or until golden delicious. And there you have our Eat Up New York Chocolate Chip Biscotti.
