I could eat sushi every day for every meal and even if it was just avocado sushi I would be a happy girl. This is an easy to make, cheap, and simple sushi recipe that I will bring for lunch or serve as hors d’oeuvres for a dinner party. Tools you’ll Need For This Simple Sushi Recipe: Bamboo Sushi Mat ( This cheap one is perfectly good ) Saran wrap (optional) Sharp Chef’s Knife Sushi Recipe Ingredients: Sheets of Nori (these have become much more widely available – most recently I got mine at Whole Foods) Cooked white or brown rice (I just use Trader Joe’s Frozen rice medley) Avocado cut into 1/4 inch slices Simple Sushi Recipe Directions: Wrap your sushi mat in saran wrap tightly, this makes for an easier clean up and if you have a cheaper bamboo mat it won’t splinter into your sushi. Place your sushi mat on a hard flat surface like a counter top or cutting board. Put the nori on the mat so that the bottom of the nori sheet lines up with the bottom of the matt and that the shiny side of the nori is against the mat. Put about 1/4 of a cup of rice along the bottom of the nori. Using clean hands compress and spread out the rice so that it spreads to the bottom edges and sides, and covers about 1/3 to 1/2 of the entire nori sheet. If you find that the rice is sticking to your hands dampen them slightly. In the center of the rice make a line of the avocado slices along the lengthwise. Less is more here. If you try to put too much in it will be harder to roll. Get a little water on your fingers and draw a line with the water on the nori just where the rice ends. Then, rolling away from you, roll until the bottom of the mat comes to meet the wet part of the nori. Then readjust the roll to bring it back down to the bottom of the mat and finish rolling the entire sheet of nori. Especially if you are making an avocado roll try not to press down on the roll too hard or the avocado will slip out the sides. Slightly wet the edge of the knife. Using gentle sawing motion to cut the roll in half, then continue to cut each piece in half until you have 8 rolls. I hope you enjoy this Simple Sushi Recipe as much as I do.
