Healthy Pecan Bites

Let’s face it. Every year as the holidays roll around, we know one thing remains the same. Glorious, never ending amounts of FOOD are guaranteed. Delicious horderves at holiday parties, cherished family recipes at every dinner, and homemade treats brought to your office just because. But as delicious as all this food is, it can also leave someone like me, who tries to live a healthy life year round, suddenly feeling gross and stressed out. Well, hate to break it to everyone, but the holidays are unavoidable. Invitations for parties, dinners, and events will surely come up, and you should not let those scare you! Instead, let’s all try and approach the holidays in a healthy way knowing that it’s a special time of the year to share with friends and family, and not entirely about the food consumed(although that is important as well!). And guess what? There are many ways to ensure a healthier holiday. One idea is to make your own treats to bring to every holiday outing. This guarantees at least there will be one healthy and delicious item you can indulge in all you want. You may even be surprised how people end up gravitating towards your treat….especially if they are these Healthy Pecan Bites.

Here’s my healthy pecan bites recipe that is delicious and ensures you will not be mistaken for Santa by the end of this season…

Makes 12 Bites/Squares

Crust Ingredients:
1 Cup Pecans
1/2 Cup Pitted Dates
1 Tsp Cinnamon
1/4 Tbsp Vanilla Extract

Filling Ingredients:
1 Cup Pitted Dates
1 Cup Pecans
1 Large, Very Ripe Banana
2 Tbsp Agave (Or more dates instead)
1 Tsp Vanilla
1 Tsp Cinnamon
1/8 Tsp Nutmeg
Pinch of salt to taste
(Extra Pecans/Carob nibs/Dark Chocolate Chips for Topping)

Directions:
Using a food processor, process pecans first. One by one, begin adding the dates until it creates a dough like consistency.
Continue adding until all used, and add rest of crust ingredients.
Pour all of crust “dough” into 8×8 container, pressing down firmly until it spreads and covers entire pan, place in freezer.
For filling, add all ingredients to food processor and blend until dough like consistence appears. You may need to add a little water or coconut oil to get things going!
Remove pan from freezer and add filling, spreading evenly across crust.
Add toppings as desired.
Cover pan with saran wrap/foil and place back in freezer overnight.
